As a clinical nutritionist, I am committed to creating recipes that promote health and well-being while satisfying your taste buds.

This Plant-Based Protein Banana Ice Cream is a delicious and nutritious alternative to traditional ice cream, providing a rich source of plant-based protein, vitamins, and minerals.

Bananas are packed with potassium, which supports heart health and muscle function, while plant-based protein helps in muscle repair and overall body function.

This ice cream is perfect for those seeking a healthy dessert option that doesn't compromise on flavor or nutrition.

Ingredients

Serves: 4

  • 4 ripe bananas, peeled and sliced

  • 1/2 cup plant-based protein powder (vanilla or unflavored)

  • 1/4 cup almond milk (or any plant-based milk)

  • 1 tsp vanilla extract

  • 2 tbsp macadamia nut, almond, or seed butter (optional for extra creaminess)

  • 1-2 tbsp maple syrup, fresh medjool dates, coconut sugar or rice malt syrup (optional for added sweetness)

Prepare the Bananas:

  • Peel and slice the ripe bananas.

  • Place the banana slices in a single layer on a baking sheet lined with parchment paper.

  • Freeze the bananas for at least 2-3 hours, or until completely frozen.

Blend the Ingredients:

  • In a high-speed blender or food processor, combine the frozen banana slices, plant-based protein powder, almond milk, vanilla extract, and almond butter (if using).

  • Blend until smooth and creamy. You may need to stop and scrape down the sides of the blender or processor a few times to ensure everything is well mixed.

Sweeten to Taste:

  • If desired, add maple syrup, fresh medjool dates, coconut sugar or rice malt syrup to the mixture and blend again until incorporated.

Serve Immediately:

  • Scoop the banana ice cream into bowls and serve immediately for a soft-serve consistency.

  • Alternatively, you can transfer the ice cream to a container and freeze for an additional 1-2 hours for a firmer texture.

Optional Toppings:

  • Fresh in-season fruit

  • Nut or seed butters

  • Granola

  • Seeds

  • Vegan hazelnut chocolate spread

Nutritional and Health Benefits:

  • Bananas: High in potassium, which supports heart health, muscle function, and blood pressure regulation. They also provide dietary fiber, aiding in digestion.

  • Almond Milk: Low in calories and rich in vitamin E, an antioxidant that helps protect your cells from damage.

  • Almond Butter: Adds healthy fats, protein, and fiber, contributing to satiety and heart health.
