Paleo porridge with raspberry sauce

Ingredients
Serves: 2
For the Porridge:
1/2 cup almond meal
2 tbsp psyllium husk
3 tbsp golden flaxseed meal
1 tbsp tapioca starch
1 cup plant-based milk or water
Pinch of salt
For the Raspberry Sauce:
1 cup raspberries (fresh or frozen)
2 tbsp maple syrup, coconut sugar, or organic sugar
1 tsp vanilla extract
Optional Toppings:
Seeds (e.g., chia, sunflower, pumpkin)
Golden flaxseed oil
Warm plant-based milk
Nut butters
Plant-based protein powder

Prepare the Raspberry Sauce:
In a small saucepan, gently warm the raspberries, maple syrup (or chosen sweetener), and vanilla extract over low heat.
Stir occasionally until the mixture is warm and slightly thickened. Set aside.
Make the Porridge:
In another small saucepan, combine the almond meal, psyllium husk, golden flaxseed meal, tapioca starch, plant-based milk (or water), and a pinch of salt.
Gently warm the mixture over low heat, stirring continuously until it thickens and is hot. Adjust the thickness to your liking by adding more or less liquid.
Serve:
Divide the porridge into two bowls.
Top with the warm raspberry sauce.
