Flourless chocolate cake with chocolate ganache

Ingredients

For the Flourless Chocolate Cake:

  • 1 cup high-quality dark chocolate (70% cocoa or higher), chopped

  • 1/2 cup coconut oil or ghee

  • 3/4 cup raw sugar

  • 1/4 tsp salt

  • 1 tsp vanilla extract

  • 3 large eggs

  • 1/2 cup unsweetened cocoa powder

For the Chocolate Ganache Frosting:

  • 1 cup high-quality dark chocolate (70% cocoa or higher), chopped

  • 1/2 cup non-dairy cream (or coconut cream)

  • 1 tsp vanilla extract

  • 1 tbsp maple syrup or honey (optional, for added sweetness)


Preheat and Prepare: Preheat your oven to 190°C (375°F ). Grease a round cake tin and line the bottom with parchment paper.

Melt Chocolate and Butter: In a medium saucepan over low heat, melt the chopped dark chocolate and oil together, stirring frequently until smooth. Remove from heat and stir in the sugar, salt, and vanilla extract.

Mix in Eggs and Cocoa Powder: Add the eggs one at a time, whisking well after each addition. Sift in the cocoa powder and stir until just combined.

Bake the Cake: Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until the center is set and a toothpick inserted into the middle comes out clean. Let the cake cool in the pan for 10 minutes, then remove from the pan and let it cool completely on a wire rack.

Prepare the Ganache: While the cake is cooling, make the chocolate ganache frosting. In a small saucepan, heat the coconut cream over medium heat until it just begins to simmer. Remove from heat and pour over the chopped dark chocolate in a heatproof bowl. Let it sit for a few minutes to melt the chocolate, then stir until smooth. Add the vanilla extract and maple syrup or honey if using.

Frost the Cake: Once the cake is completely cool, spread the chocolate ganache over the top and sides of the cake using a spatula.
