1/2 cup almond meal
1 tbsp tapioca starch
2 tbsp coconut oil
1/4 tsp sea salt
1 1/2 cups water
2 tbsp macadamia nut butter
1/2 cup fresh or frozen strawberries, chopped
Optional add-ins: 1 scoop collagen powder, 1 scoop plant-based protein powder
Optional Toppings:
Peanut butter or any nut butter
Golden flaxseed oil
Maple syrup, coconut sugar, fresh medjool dates (chopped), or rice malt syrup
Fresh berries
Passion fruit
Bee pollen
Prepare the Porridge:
In a medium saucepan, combine the psyllium husk, ground flaxseed, ground sunflower seeds, almond meal, and tapioca starch.
Add the water and stir well to combine.
Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring continuously to prevent lumps.
Cook Until Thickened:
Continue to cook, stirring constantly, until the porridge thickens to your desired consistency, about 5-7 minutes.
Stir in the coconut oil, sea salt, and macadamia nut butter until well incorporated.
If using, add the collagen powder and plant-based protein powder, and stir until fully dissolved.
Add the Strawberries:
Fold in the chopped strawberries and cook for an additional 1-2 minutes until they are warmed through.
Serve:
Divide the porridge between two bowls.
Top with your choice of optional toppings: a dollop of peanut butter or nut butter, a drizzle of golden flaxseed oil, a splash of maple syrup, fresh berries, passion fruit, and a sprinkle of bee pollen.
